(1) Before start, add the water, then put the flour at one time.(the ratio of water to flour is two to one) water temperature about 20 degree.
(2) Knead dough: need 12 minutes, veering 5-6 minutes, inversion 5-6 minutes, then stop to let the dough not less than 12 minutes.
(3) Wash dough: After (2) steps, add the water about 15kg to hopper, start washing dough, 3 minutes later, stop the machine to discharge the batter.
(4) The second washing time not exceed 5 minutes, and following 2 times could be longer. Above all, wash, discharge, filter, four times, then the gluten will be finished.
(5) Effect: make 25kg flour, need about 45minutes.(not include the stop time) Every 1kg flour can make 0.45kg gluten.
